Wild rice and bison put a Native American Food Pyramid twist on this favorite. A great choice for Thanksgiving, not only as a tribute to the original hosts of the event, but also because meatloaf can be made ahead of time.

Ingredients
  • 1/2 cup wild rice
  • 1 onion, finely chopped
  • 1 clove garlic, minced
  • 1 tablespoon sunflower oil
  • 1/4 cup dried bread crumbs
  • 2 eggs, beaten
  • 1/4 cup milk
  • 1 tablespoon mustard
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon dried sage
  • 2 pounds ground bison
  • Huckleberry Glaze
  • 1 jar huckleberry preserves (Bass Pro Shops)
  • 1/4 cup minced red onion
  • 1/4 cup balsamic vinegar
  • 1 clove garlic, minced
  • 1 tablespoon sunflower oil
  • 2 tablespoons butter
  • 1 teaspoon sage
  • 1 tablespoon honey or maple syrup
  • Salt and pepper to taste
Directions
  • Step 1 Cook wild rice according to package directions until tender but still firm
  • Step 2 drain. In large skillet, sauté onion and garlic in sunflower oil until crisp but still tender.
  • Step 3 In large bowl, combine cooked wild rice, sautéed onion and garlic, bread crumbs, eggs, milk, mustard, salt, pepper, Parmesan cheese, sage
  • Step 4 mix well. Add meat and mix gently but throughly with hands.
  • Step 5 Form into oblong shape on broiler pan. Cover and bake at 350 degrees Fahrenheit for 60 minutes. Remove cover and bake for 15 to 25 minutes longer until internal temperature registers 165 degrees Fahrenheit. Cool in refrigerator
  • Step 6 then wrap, label, and freeze.
  • Step 7 Huckleberry Glaze
  • Step 8 Heat the sunflower oil in a saucepan with 1 tablespoon of butter and saute onions and garlic.
  • Step 9 Add huckleberry preserves, vinegar, and honey.
  • Step 10 Lower the heat and let simmer for 8 to 10 minutes, stirring occasionally.
  • Step 11 Reserve in refrigerator with remaining 1 tablespoon of butter until you are ready to serve the meatloaf.
  • Step 12 Serving
  • Step 13 Thaw meatloaf overnight in refrigerator. Slice the meatloaf while it is still cool and place in baking dish. Pour 1/4 cup of huckleberry glaze over loaf. Cover dish and bake at 375 degrees Fahrenheit for 20 to 25 minutes until meat is thoroughly heated.
  • Step 14 Heat remaining glaze with 1 tablespoon of butter and pour over the loaf to serve.
